Hello lovelies! I wasn't sure what to call this meal.
You could call it easy.
You could call it quick.
You could call it delicious.
I decided to just call it what it was--Mexican Walnut Meat with Brown Rice and Cucumber.
This was an easy, practically hands off meal. The only cooking required was the brown rice. Perfect for a meal after you've been at work all day and don't want to fuss.
Mexican Walnut Meat with Brown Rice and Cucumber
1.5 cups walnuts
1 TB tamari of soy sauce
1 tsp garlic powder
1/2 tsp ground cumin
1/2 tsp smoked paprika
Pulse the walnuts in your food processor until it is the texture of coarse crumbs. Spoon the mixture into a bowl and stir everything else in.
Then add:
1 cup sweet corn (defrosted if frozen)
1/2 of a red pepper, diced
a few sun dried tomatoes (optional but nice)
Mix it all up together in a bowl, slice some cucumber for the side and serve over brown rice.
If you need it to feed more people, add a tin of kidney beans to the walnut meat and double the spices.
I kind of feel like this is not even a recipe as it's so easy. But it was delicious and quick, so i thought it was worth sharing.
