What We Ate Wednesday--Throw Together Meal #42

Hello lovelies! I have missed a few weeks blogging What We Ate Wednesday as i have been back at work and really tired from getting back into the routine of long hours on my feet and so have relied on easy throw together meals or food we eat all the time. There has been no energy to try new recipes, but  am feeling better so there will be new content soon. Also the library has opened up again for click and collect so I have been checking out cookbooks for inspiration.

This however is just a throw together out of stuff we had on hand. It is similar to ones we have had before but a few tweaks made it worth blogging. Also we don't normally eat a lot of processed food But Spiderman found some marked down plant based nuggets from M&S that are vegan and gluten free so we added them. But in future I will probably just add chickpeas.

Throw Together Meal #42

400g potatoes, diced
vegetable stock to cook the potatoes

1 onion, sliced into rainbows
garlic
half a carrot, cut into matchsticks
1/4 of a red pepper, diced
200g mushrooms--about 6-8 depending on size
100g kale--about 3-4 handfuls
1/2 cup vegetable stock
-2 TB tamari or soy sauce
juice of half a lemon
chickpeas (optional) 

1. Put your diced potatoes in a pot with strong vegetable stock and bring to the boil. Cook until they can be easily pierced with a knife then drain.
2. Cook your onion in a splash of vegetable stock (I just scoop out some from my potatoes) until softened then add your garlic and carrots, pepper and mushrooms. Cook until softened.
3. Add your kale and optional chickpeas. Then add the 1/2 cup vegetable stock, tamari or soy sauce and lemon juice. Cook until the kale has turned bright green and reduced. Add in your drained potatoes. 
4. Taste and see if it needs another splash of tamari/soysauce and or another squeeze of lemon. Add some ground black pepper if you wish. 

This was fast and easy and tasted fresh and delicious. Here it is with the plant based vegan nuggets on top.
